I had a business credit card with American Express where I was the personal guarantor. I am now being sued personally for the card, and there is no mention of the now-closed business. Do the letters and answers still apply the same way in this situation?

Yes if a personal liability which you appear to be on the hook for. So the collection rules of the FDCPA and your state should apply to protect you. If your business alone is the only signor, then you are off the hook and don't need consumer collection protection. Not advise here, but you are are personally on the hook as they claim but you get the good stuff with it.
